Seasonal blues, self-doubt and stress, anxiety and fear – all these things sound so familiar to me! (I’m talking about my own battle with depression and anxiety here, just in case you’re interested in my emotional journey).So yes – I guess this is why I’ve learned my lessons too well: a small treat, anything that gives you joy is actually a BIG thing!…
This little treat can be a pretty dress that I can wear to a party, or a coffee date, to pick my kids up from school or to a casual dinner! Its fabric, the romantic style; its fit – a little dress like this can uplift my mood for sure!

But seriously though, a small treat like these yummy & healthy Blueberry Cupcakes can make such a big difference to how your day goes…
Right? 🙂…And as for the cupcakes – I won’t talk too much about how they are made (because… well, you’ll find it in the recipe!). But I do want to add one little note:
A Quick Tip:
If only want to make just one cupcake for yourself, just to fix your blues like… asap…
Just divide the recipe by 10 and make a Healthy Blueberry Mug-cake (it’ll look similar to this Healthy Strawberry Mug-cake, and you can frost it with the super-easy to make frosting from the recipe, if you’d like!)
Or (this is what I like to do): just mix the fat-free greek yogurt with some stevia or sugar and smear some on top of your cake!

Healthy Blueberry Cupcakes Recipe for the dessert that is low-calorie, all-natural, easy to make, high in protein and so yummy and delicious!
- 1 1/2 cup flour of choice I use white whole wheat
- 2/3 cup fructose sugar or 3/4 cup regular sugar
- 4 egg whites
- 1/3 cup fat-free Greek yogurt
- 4 oz blueberries
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 cups fat-free Greek yogurt
- 1 cup cup fat-free True Whip* thawed out thawed out
In a mixing bowl, combine the flour, sugar and baking powder.
Combine the egg whites, vanilla extract and yogurt and mix until fully incorporated.
Combine the dry and the wet mixtures. Mix together until incorporated. Fold in the blueberries.
Pour batter into the cupcakes moulds and bake at 350 F for 15-20 minutes, or until a toothpick comes out clean.
To make the frosting whip together the yogurt and the True Whip until fluffy.
Pipe the frosting on top of the cupcakes and decorate with a few extra blueberries
*I usually look for the healthier variation of the "Cool Whip": the "True Whip" which is all-natural.

Thank you, Debra! And yes, you should definitely be able use the white flour! I haven’t tried making them with the regular white flour, but it’s all-purpose, so it should definitely work! If you bake them this way – I’d love to know how they came out! 🙂
