Surprising my loved ones (and friends!) with a wholesome treat always fills my heart with joy! And let me tell you: it was so fun to see my kids enjoy these Easy Healthy Carrot Brownies that I baked last week! Super-quick and simple to make, they were at the same time so scrumptious and yummy!
…Also brought them to one of my kids’ classes and got complimented on my baking! And it felt so good! 🙂
Oh, and of course I had a few bites myself!
Because while sharing is great for my heart and soul (and my waste-line: ’cause you can’t stay in shape by eating too many yummies!), treating yourself for a little bit – is definitely good for your mood! 🙂
And because these sweet Carrot Brownies are wholesome, lower sugar and reduced fat compare to your usual brownies, I knew that having more than one would never hurt my size! 🙂Do you want to know the secret behind all all that goodness?
The carrots, of course!
Just as any produce mixed into a dessert recipe – carrots made these brownies not just more nutritious and wholesome! They also allowed me to use less sugar and less fat – since the moist sweet carrot puree balanced all the dry ingredients so nicely!Also, just as with these Carrot Cake Cookies, one of my favorite things about that recipe was that I was able to mix all the cookies ingredients in one bowl!
That’s exactly what I did for these Easy Healthy Carrot Brownies as well! One and done! Quick, effortless and impressive! Just like I like it!
Oh, and if you own a food processor – that makes things EVEN easier! This way the whole preparation process takes just about 5 minutes! 🙂And here’s another good thing:
You can sub the carrot puree for pumpkin or sweet potato puree – or any other veggie that’s similar in texture to carrots (for instance I wouldn’t recommend using zucchini because it’s more watery and not as sweet as the carrots)!
This way you can adjust this recipe to your mood and season!

Easy Healthy Carrot Brownies are quick and mess-free to make! No shredding of the carrots, in fact they can be made all in one bowl! They're full of healthy produce, low-sugar and low-calorie, pretty and so yummy!
- 1 1/2 cups flour
- 3/4 cup fructose sugar or 1 cup regular sugar
- 1 egg
- 2 egg whites
- 1/4 cup oil I used coconut oil
- 1 cup cooked mashed carrots
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1/2 tsp orange extract
- 1/2 tsp orange zest
- 3-4 tbsp chocolate chips optional
If using the food processor - put all the ingredients except for chocolate chips in it and blend until smooth.
Otherwise mash the carrots. Beat together oil, sugar egg, egg white and carrots.
In a separate bowl, sift together flour, cocoa powder, baking powder and salt; add to dough mixture, blending well. Stir in the zest and the extracts. Fold in the chocolate chips.
Preheat the oven to 375F. Line a 9 X 9 baking pan with some parchment paper and bake for about 25-30 minutes or until the toothpick inserted in the middle comes out clean.
Let the brownies cool to the room temperature before gently taking out of the baking pan and cutting. Enjoy!
