In this Healthy Pumpkin Truffle recipe you’ll find two versions of the same thing, one easy. And another one… is even easier!
VERSION-1: EASY HEALTHY PUMPKIN TRUFFLES
This version is already very easy! The dough ingredients are very similar to the ones in the Healthy Chocolate Pumpkin Bars, but with a few adjustments to make the mixing of the dough and the forming of the truffles easier!
But when it comes to preparing the dough, basically all you need to do is to throw all the ingredients in the blender, give it a few spins, pour it into a pan, bake it until it’s just set, puree it – et viola!
Form the pieces of dough into little balls and roll in some cocoa powder to make them look pretty (and taste even more chocolatty!)
THE SUPER-EASY HEALTHY PUMPKIN TRUFFLES!
Did you think that Version-1 was easy? Well, here’s how to make these truffles even quicker (even if you really only have a few minutes for them!)
You’ll basically use the same dough. Only this time you’ll be using less flour (see the recipe)! This way mixing up the dough will be a breeze! It can even be done easily with just a wink or even with a fork!
Next: the microwave! (Note: because I like things to be as healthy as can be I am not a huge fan of using a mice! This is why I’m giving you the first, oven-baking option of this recipe!)
But all this is to say – the microwave baking is very quick and it also helps with steaming out the liquids! Microwaving brings the molecules in the dough to boil super fast and the liquids evaporate quickly. Which means that you can get away with a really runny, easy-to mix up dough and the result will still be pretty solid!
Oh, and here’s another reason why I love this recipe so much! Well – not only it’s really quick! It’s also so very versatile!
Add some chocolate chips in the dough after it’s cooked and mashed – and you’ll have the chocolate chip truffles!
If you have some time and don’t like a bit of a mess – you can dip them in some melted chocolate for a real-candy indulgent version (my kids love this one the most!)Finally, wrapped in pretty paper or set on a pretty plate – they look so yummy and indulgent! Just like real candy! Only with all the healthy, nutritious enough to be eaten for breakfast ingredients inside! 🙂

- 1/2 cup flour Use this much flour instead of 3/4 cup. All the other ingredient amounts stay same
Preheat your oven to 350 F. Line a cake pan with the parchment paper.
Pour all the ingredients into a blender and blend until incorporated.
Pour the dough in the pan and bake for about 30 minutes until just set.
Mash the dough or use a food processor. Roll dough between your palms to form 20 equal-sized balls. Place on a plate in the and chill at least 30 minutes.
Dust with some cocoa powder or dip in some metled chocolate.
Pour all the ingredients into a blender and blend until incorporated. Alternatively just whisk everything with a whisk or a fork.
Pour the dough into a large microwave-safe pan lined with some parchment paper.
Microwave for 5 minutes, in 1-minute increments. Depending on your microwave start checking at 4 minutes. It may take up to 8 minutes for the dough to set and be solid enough to be formed into truffles).
Roll our the truffles and enjoy!
