Quick to make, you can have it as a breakfast, snack or (of course!) dessert!
…And if you put on a pretty dress like the one I’m wearing here and get to hang out with your friends, family or neighbors, – your good mood for the weekend should be a done deal!
MY PEANUT BUTTER STORY
What are your relationships with the peanut butter? 🙂 Just to cheer you up some more let me share a little story of my relationships with PB!
Mine was that when I was growing up in Russia we did not have peanut butter at all! But then I came to the US and tasted some PB for the first time… And… I had a “Meet Joe Black moment”!(If you haven’t seen that movie where Brad Pitt plays death that wanted to experience living as a human being and try all the “best things lives has to offer”… It’s a great movie – you definitely should watch it!)
So, Brad’s death tastes PB for the first time and can’t believe the bliss he’s experienced!What can I say? Just like Brad, I love the taste of my PB!
Oh, and my kids… They LOVE their PB&J sandwiches!
The only thing that I don’t particularly like about my PB? Yes – there is that something… Guess what it is?PB is, well… it’s a butter! Which means it’s 100 calories in just one spoon! And although these aren’t “bad” calories, PB and anything that’s made with it is… well, not quite diet food!

But there is a solution! The powdered PB that cuts down the calories and the fat content by 2/3 at least!Now, I know I’ve already shared a few Cookie Dough recipes with you!
But I could not resist making this PB version featuring my latest favorite discovery – the guiltless powdered PB!:)…Oh, and if you like quick easy desserts, here’re a few more for you to consider as a part of your fun-weekend project!
Low-Calorie Banana Marshmallow Dessert
Low-Sugar 10-Minute Marshmallows
The Low-Calorie Peanut Butter Cookie Dough is yummy, healthy and... guiltless! You can indulge on it without worrying about gaining weight!
- 1 cup white whole wheat flour
- 1/2 cup powdered peanut butter*
- 1/4 tbsp regular peanut butter*
- 1/2 cup unsweetened apple sauce
- 1/4 tsp salt
- 1 tsp vanilla extract
Preheat oven to 350˚F. Spread the flour on a parchment-lined baking sheet and bake for 12 minutes. To ensure that the flour is cooked through pile the flour into a mound and insert an instant-read thermometer. The temperature must be at least 160F. If it's lower than that let the flour bake 2-3 minutes longer.
Let cool down to the room temperature. In the mean time beat the peanut butter, salt, sugar and vanilla until fluffy. Add the apple sauce and beat some more until incorporated.
Whisk the powdered peanut butter powder with the flour.
Fold the dry mix into the butter mixture. Mix until incorporated.
Scoop the dough into a container pressing it down gently. Let the dough cool down in the fridge until it's hardened. Enjoy!
*My favorite is PB2, but if you're allergic to peanuts you can also use the powdered Almond Butter instead!
* For this recipe I like using the "stir" version of PB, because it has more oil in it which makes it easier to mix the dough!
On the ingredient list there isn’t sugar but the instructions show adding sugar
