The Healthy Semolina Apple Mousse is indulgent, easy to make, low-calorie, fat-free, all-natural, vegan, low-sugar and super-yummy! Similarly to the Healthy Apple Meringue Mousse the Healthy Semolina Apple Mousse is made with apples that give it its fluffy texture, fresh taste and all the health benefits that eating apples provides!
So… what do you say about another Apple Mousse recipe? I will say: oh, yes!
Because let me just tell you this: I LOVED my Healthy Apple Meringue Mousse so much, that I wanted to make it again! But then… making the same thing over again isn’t as interesting as making something new, right?
So, since I was still craving an Apple Mousse, this time around I decided to introduce a new way to make it:
Just as guiltlessly indulgent and as easy to make (arguably this way can be even easier!), this recipe was just what I need now, in-between the two “big-feast-holidays”! (Thanksgiving and Christmas!)
…Because if you’re anything like me, than you know how difficult it can be to use caution throughout the Holiday Season when you’re a big-time sweet tooth! 🙂
THE HEALTHY SEMOLINA APPLE MOUSSE
So, here’s the deal with this Apple Mousse recipe: as you might’ve guessed from its name, this mousse is made with apples and semolina (a course variety of wheat commonly used in the US to make hot breakfast cereal).
Yet, the semolina fluffs up beautifully when it’s whipped (just as the apples do due to the high content of pectin in them)!
This way of making a mousse is actually very popular in Eastern Europe and I would never had known this geeky fact unless I was, in fact, born and raised in Russia! 🙂
Yet, it is a very popular Russian-Polish recipe! A semolina-based mousse can be also made using various berries or fruit. Also some recipes use gelatin to make the mousse fluffy and help it hold its shape.
But as far as my version of this recipe: I didn’t really want to use the gelatin for the two reasons:
Gelatin vs No-Gelatin Version:
- I wanted to make this mousse vegan (just for a change, and in case you want to have a vegan recipe in your recipe box) 🙂
- Adding gelatin adds an extra step. An extra step = more time prepping. If you’ll be making it for presentation of for a party, I’ll probably recommend consider using the gelatin then: since it will help it hold its the shape and instead of looking puddingy it’ll be stiffer. But if you are just making it for your own and family’s indulgence – I say: make it, whip it and eat it all up! 🙂
And also: I used less sugar than in a traditional Russian Semolina Mousse Recipe, and instead I substituted it for the fructose sugar which is much sweeter than the regular sugar and thus you need to use less to get the same yummy-sweet taste! 🙂 So, what do you think about making this yummy treat?

Oh, and if you make this mousse made the night before – it makes SUCH A WONDERFUL breakfast! Mmmm! It’s like having it all in one fluffy cloudy bowl of indulgence: the fruit, the carbs, and a whole lot of yummy joy to begin your day with!

The Healthy Semolina Apple Mousse is indulgent, easy to make, low-calorie, fat-free, all-natural, vegan, low-sugar and super-yummy!
- 4 apples
- 1/3 cup cream of wheat whole wheat if possible
- 1/4 cup fructose sugar
- 1 tsp pectin
- 1 tsp vanilla extract
- Peel the apples and cut them into chunks.
Add the apple pieces, a couple of tbsp of water and the pectin to a large saucepan and cook over a medium heat until the apples are very soft.
Add the sugar, stir and cook for a few minutes until the sugar dissolves. As you continue stirring add the semolina. Cook for about 3-4 minutes until the mixture is very thick, stirring constantly.
Take the pot off the heat, cover and let it cool completely.
Blend the mixture until it's smooth and pureed. Add the vanilla and whip for about 5 minutes until the mousse becomes very light and fluffy.
Start eating out of the mixing bowl if you are really impatient, or serve it in pretty dessert cups!
