What excites you in life? 🙂 I mean… I know it’s a very broad topic… 🤔But seriously, what motivates you? 🙂 Have you ever thought about it? 🙂Do you know why I’m asking?
It’s because I (just like I’m sure most of you) often find myself running around doing my daily chores and following a routine that’s usually isn’t exciting at all! Well, what else did you expect a routine to be? 😉And subconsciously I am always looking for the ways to add a few sparks to my life! (Just like I’m sure most of us do!)So… what excites me? It’s creativity! Yes, coming up with something that hasn’t been done before, creating something that may impress or help those who I share my creations with… And it isn’t just the creating process.
…It’s also the anticipation of showing off the results of that process and getting a (hopefully positive Oooh’s! and Aaah’s!) feedback!
Well, perhaps it’s in any human being’s nature, that desire to bring something in to the world, something that only YOU had the mind to create, and maybe, hopefully, make this world a bit better… Or at least more interesting! 🙂
OK, so now that I’m done being philosophical 🙂 let me share with you my latest creation; the one that I’ve been REALLY excited about lately!
Decorated with a few red strawberries these Blue Blondies make a great Patriotic Dessert, don’t they? 🙂

The Healthy Blue (as in Blueberry) Blondies are all-natural, low-calorie, easy and fast to make, delicious and super-nutritious!
Line a 9X9 baking dish with some parchment paper or drizzle with oil and dust with the flour. Preheat the oven to 350F.
Put the blueberries, potatoes, oil, egg whites, vanilla extract, salt, baking powder and sugar in a food processor or a blender. Blend until smooth and the ingredients are incorporated.
Pour the mix from the blender in a bowl, add the flour and mix until incorporated. (If using high-quality food processor you can just add the flour to the mix in the food processor and pulse until the flour is incorporated with the rest of the ingredients. However if you have a simple blender, it's best to mix in the flour separately because the mixture may become to thick for the food processor to mix)
Pour the blondie mixture in the baking dish and bake for about 45-50 minutes or until a toothpick inserted in the middle comes out clean.
If desired dust with a bit of powdered sugar before serving (that makes the blue blondies look really striking, but... well, it's the sugar. And the calories. So...I'll let you make the call here! 🙂 )
*The Purple Sweet Potatoes are naturally purple! Bake them just like you bake the regular sweet potatoes: about 1 hour, wrapped in foil at 375F. Alternatively peel them and steam them until they are soft.
**The fructose sugar is 1.5 times sweeter than the regular sugar. (which allows you to use less of it to cut down on the calories and on the sugar intake!). If you are using the regular sugar, use 1 whole cup of sugar.
