I’ve been seriously loving this Healthy Chewy Banana Cookies recipe lately! In fact, I think that this recipe has become one of my go-to recipes (a recipe that I always refer to when I need to quickly think of making “something sweet”)! And it’s not only because they truly just take a few minutes to mix together!It’s also because they’re so easy to bring to any summer get-together, share with a friend (my go-to way to ask for a friend-date! :)) or to stuff into your kids’ (or your own, if you work at an office!) lunch box, because… back to school is just around the corner! 🙂

So what is the secret behind these easy, healthy chewy banana cookies that also taste so good?
The natural sweetness and gooeyness of bananas never stops inspiring me to make more and more banana-y treats! (Oh, and the fact that there are always, ALWAYS leftover overripe bananas that have to be used up in mostly anyone’s kitchen, right? 🙂Also, the nutrition component is one of my favorites: when I cook with the bananas I always add less sugar to the recipe because the bananas are so sweet! Especially if they’re overripe!
A say: what a great way to cut down on the unnecessary fat and calories! 🙂But what I love best about this particular recipe is that making these cookies seriously doesn’t take more than a few minutes! (Because whoever wants to spend their summer time sweating in the kitchen when it’s so hot (and fun!) outside!) If you own a blender that makes things even better! All you’ll need to basically do is just throw all the ingredients in it, give it a few spins and your dough is ready to go!
But even if you don’t have one – making this recipe is such a bliss!
Mash the bananas, mix everything up, et viola!

The Healthy Chewy Banana Cookies are easy to make, low-calorie, low-fat and all-natural. Serve them as a healthy dessert, snack or breakfast!
Preheat the oven to 375F. Line a cookie sheet with parchment paper.
If you own a food processor - put all the ingredients in it and blend until smooth.
Otherwise in a medium bowl mash the bananas. Add the oil, egg whites, yogurt and vanilla extract. Mix together. In a separate bowl whisk together the flour, baking powder and sugar. Pour the wet mixture into the dry mixture and mix well until incorporated.
Drop the dough by teaspoonfuls onto greased baking sheets.
Bake 15 minutes, or until just lightly golden. Enjoy!
