Well, what I think is that getting a treat always puts me in a good mood! And since good mood is a HUGE factor when it comes to beating the stress, while at the same time beating the stress is a HUGE thing when it comes to our beauty routine… I think that treating ourselves to something that makes us feel good HAS to always be on our beauty to-do lists!
OK, OK! A treat doesn’t always have to be a dessert! Actually, if there’re other things that help you beat the stress and feel treated – I’m celebrating you for that! But a dessert is still a good option, right?
Also, the Mother’s Day is just around the corner! So – aside from a beautiful gift that I’m going to give to my mom, I always love treating her to a home-baked goodness! …And then getting together to sip some tea, munch on that treat and recall those precious days when Mom used to teach me how to bake! What can be better than that? 🙂
The Healthy Strawberry Cheesecake
This Strawberry Cheesecake is guiltless and healthy, just like it’s stated in the title! Well, there is some butter in the recipe. But there isn’t a lot of it. And a little bit of fat isn’t only good, it’s actually necessary for your health. Still, otherwise this cheesecake is REALLY light and altogether low-calorie! (And yes, you can eat it for breakfast!)
But what makes this Healthy Strawberry Cheesecake a bit different and interesting is that – once again – it’s a Russian-inspired dessert!
I thought it’d be interesting for you to try out this slightly different version of a cheesecake! Besides, once again, I used the Russian “tvorog”, or the farmer’s cheese for this cheesecake. (You can also use ricotta cheese – it has the same exact consistency).
The farmer’s cheese that I’ve already used in this cookies and this syrnikis recipes is so much lower in fat and higher in protein than the cream cheese! Which is precisely what I love about using it in my baked goods! It makes them healthier and guilt-free!
In Russian this cheesecake is called the “King Cheesecake”! 🙂 I guess, it’s because of the crumbly top and the pie-like crust that makes it look pretty special! Well, what matters more, is that it tastes REALLY good! And what can be better than a treat? Only the guiltless and healthy treat, of course! 🙂 Right?

The Healthy Strawberry Cheesecake is lower-fat and higher protein than a regular cheesecake! The crumbles on top and the pie-like crust make this healthy treat even more indulgent and flavorful!
- 4 oz butter softened
- 2 cups white whole wheat flour
- 1 tsp salt
- 1 tsp baking poweder
- 3-4 tbsp cold water
- 1 lb fat-free farmer's cheese
- 4 eggs
- 2/3 cup sugar
- 1 tsp vanilla extract
- 4-5 strawberries
Preheat the oven to 350 F.
Whisk all the dry crust ingredients. Add the butter and mix together. The dough will be very crumbly! Add the water and mix again.
Press 2/3 of the dough into the round 9 inch springform pan, covering both the bottom and the sides of it. Set aside.
For the filling blend all the ingredients together until smooth.
Pour the filling over the crust.
Sprinkle the 1/3 of the crust dough on top of the filling, crumbling it as you go.
Bake the cheesecake for about 50-60 minutes until the crumbs are older brown.
Cool the cheesecake before cutting it! Enjoy!
