I’ll say that I’ve had some very yummy-delicious good breakfast-times with these cookies! 🙂
And of course I was also happy to pack these babies as a snack in my boys’ lunches! They loved having cookies as a part of their lunch! And it made me proud to be a good mommy feeding my boys all the good stuff! 🙂

OK – you may already know how busy-lazy I oftentimes get! 🙂 But then… who wants to spend more than a few minutes in the kitchen when it’s already 10 pm and you’d like to get some beauty sleep while there’re still things to be done, laundry to be folded, a shower to be taken and…. all those other things that come with the mommy life!
So… what is the favorite part?
They are QUICK and EASY to make! One bowl: one and done!

Even though I was using whole apples, these cookies were a bliss to make!
But if you want to make them super-quickly you can use the applesauce instead of the real apples!
But this time I just had a lot of apples in the kitchen and so I basically made my own applesauce by boiling the apples until they were soft. When I put the boiled (or you can also bake them) apples in a blender with the rest of the ingredients – it’s exactly what you got: a home-made applesauce as an ingredient in the cookie dough!Finally, what made me love these cookies even more (aside from them being healthy and low-calorie-guilt-free)?
Having such cookies made the nigh before I didn’t have to think much about making any breakfast!
The cookies, a hot cup of coffee, some fruit – and a perfect breakfast is all done! Leaving me with enough time to get dressed and leave the house stress-free, yet having been healthfully nurtured! So what do you say? Let’s get to baking?
The Healthy Low Calorie Apple Cookies that are chewy, flavorful, nutritious, easy to make and completely guilt-free!
- 1 1/2 cups oat bran
- 1 egg white
- 1/3 cup fructose sugar
- 1/2 cup applesauce or 2 peeled & baked or boiled apples
- 2 tbsp nut butter I used almond butter
- 1 tso baking powder
- 1/4 tsp baking soda
- 1 tsp vanilla extract
Preheat oven to 350F/175C and line a baking sheet with parchment paper.
If using the applesauce just mix all ingredients together in a mixing bowl. If you boiled or baked the apples - it's eaiser to put the apples with all the rest of the ingredients except for the bran in a blender. Once blended, mix in the bran.
Take tablespoonfuls of dough and place on the lined baking sheet.
Bake for about 15 min, slightly longer if needed, until lightly brown. Allow to cool on a cooling rack.
