Sometimes the color alone can turn a regular cookie into a very-festive cookie! That’s precisely what makes these cookies not only low-calorie & guiltless, but so very versatile (enter the Holiday Season ahead of us!)…Indeed, these cookies are healthy enough to be eaten as breakfast… And let me tell you… cookies for breakfast is probably of my favorite things to wake up to (aside from maybe an indulgent Cake for breakfast!) and get excited about having breakfast!
They can also be eaten as a quite nutritious, yet festive snack… (I love them with my mid-day cup of coffee to raise up my spirits and give me some strength to deal with all my daily errands, runs and challenges!I also think that they are definitely pretty-looking and decadent enough to be served for dessert!
With that said I’ll certainly be making them again and again to put some smiles on mine and my family members’ faces!

The Healthy Low-Calorie Red Velvet Cookies Recipe can be served as breakfast, snack or dessert! Go ahead and enjoy some... no guilt involved!
Preheat the oven to 350 F. Line the baking sheets with parchment paper.
Soften the butter by letting it sit at room temperature for about 10 minutes or soften it in the microwave. Stir together the butter, applesauce, egg whites, vanilla extract, red food coloring, and sugar.
Whisk together the flour, cocoa powder and baking powder. Fold the dry mixture into the wet mixture and mix well. Let the dough cool and harden in the fridge about 15 minutes or overnight.
Take 1 tbsp of dough out and roll it into a cookie. Do the same with the rest of the dough. Sprinkle some additional sprinkles on top of each cookie.
Bake the cookies at 375 F for about 15 minutes or until golden brown. Let the cookies chill on the baking sheet before storing them and... enjoy!
