Whether you’re hosing a bbq, headed to a party or just need to use up the abundance of peaches in your kitchen (which was my case today!) – this cake is a seriously sweet and extra yummy (and generally healthy unless you eat the whole cake all by yourself in one sitting without having at least some salad before your cake-feast) solution! 🙂
Making the Healthy Peach Coffee Cake (It’s SO EASY!)
…So, just as with my Cheesecakes, making a Coffee Cake has been one of those things that I always wanted to do, but was putting it off because I was a bit bumped by all the extra effort that it seemed like I’d have to put into making it! take to make the cake and also make the streusel topping!
Because… well, com’on! You have to first mix all the cake batter things and THEN mix up the streusel toping! It’s a two step process!
My lazy soul just wouldn’t get so excited about doing something as complicated this! 🙂
But… just as with the Cheesecakes I got over my laziness at last!
And made the Healthy Peach Coffee Cake from scratch!
And, can you guess what? 🙂
Just as with the Cheesecakes, the fear of messing up my healthy-fied Peach Coffee Cake or messing up my kitchen as well as my peace and my schedule was bigger than the process of making it turned out to be!
And here’s what helped me make the making of my Healthy Peach Coffee Cake even easier:
- I just used one bowl. For everything: for the mixing the cake batter and for the streusel topping.
- I used the liquid egg whites (a life saver item for anyone like me with my eternal love for all things marshmallow and meringue)!
- Finally I used the parchment paper to line the bottom of the cake pan to prevent the cake from sticking to it (which made taking it out of the pan easy-breezy!)
But with all seriousness, the cake did come out delicious! Oh, and the streusel topping: it’s a real MUST!
It makes the otherwise light and extra-healthy cake look and taste truly decadent! And scrumptious! And irresistible, as the little crumbs fall onto your plate from your fork as you’re digging through a big juicy slice of it! …So what do you say? Let’s make it? 🙂
The Healthy Peach Coffee Cake is soft and tender, bursting with the fresh peach flavor and topped with lusciously yummy streusel! It's very easy to make, wholesome and lower calorie than a traditional coffee cake, yet with a few recipe tweaks it doesn't trade in the flavor!
- 1/3 cup flour
- 2 tbsp butter
- 2 tbsp brown sugar
- 1/8 tsp salt softened
Preheat the oven to 350°F and line an 8x8 baking pan (or a 9" round pan) with parchment paper (or coat with nonstick spray).
In a medium-large bowl whisk egg whites and sugar until frothy, but not stiff. Add the milk, butter, sugar, baking powder, baking soda and vanilla extract. Mix together until incorporated.
Add the flour and mix until incorporated.
To peel the peach easily rinse it boiling water or dip it in a bowl of boiling water for a few minutes. Peel the peach, take out the pit and cut it into small chunks.
Add the peach chunks to the batter and pour the batter in the pan.
In the same bowl mix together all the topping ingredients until mixture forms small chunks. To make mixing easy I used an electric mixer. You can also use a pastry blender or two knives. Scatter over the top of the batter in the pan.
Bake for 30-40 minutes, until browned and a toothpick inserted in the center comes out clean.
