OK: Fall Baking cannot be without pumpkins, right? 🙂 And also, the Pie is a must-have staple! But I’ve already baked both a Healthy Pumpkin Pie and a Healthy Sugar-Free All-Natural Pumpkin Pie!
And I’ve also baked a Crustless Pumpkin Chocolate Pie as well!
At the same time it seems like this site is missing some other healthy pumpkin dessert options!
So: to fill this gap I have baked these Healthy Pumpkin Caramel Bars!
And let me just say that: they were a success:
- Low-Calorie
- All-Natural
- Easy: it’s a one-bowl recipe that only takes a few minutes to mix!
- Super yummy and gooey!
One other reasons why I love baking bars like these is because they are so easy to wrap up and share with your friends, bring to a party or to just stash in your freezer for later indulgence!

HEALTHY PUMPKIN CARAMEL BARS!
These bars are just like I mentioned, super easy to mix up! The dough recipe I adapted from these Healthy Blender Berry Brownies, but to make them even more scrumptious and to completely conceal the fact that they’re made with all the healthy ingredients I also added some date caramel to the mix!
I just thought that it’d be more interesting than “just” the Pumpkin Bars! 🙂 And it also kind of sounds more indulgent! 🙂
With that said, I don’t have the Date Caramel as a recipe ingredient, because it would then complicate this easy recipe. For these bars I used the real dates and blended them along with all the other ingredients! (Which is basically what Date Caramel is all about!)
At the same time I like making my Date Caramel sometimes: that is, WHEN I have the time to make it. Oh, and also when I buy one of those big bulk date containers from Costco and end up with just too many dates to use!
Also, the Date Caramel is actually a useful thing to have: It makes a great healthy sub for the real caramel and I can also spread it on any of my healthy cookies or on a slice of bread for a healthy PBJ sandwich variation for my kids.
So: if you ended up making my date caramel and want to use the leftovers – just use 1/2 cup of Date Caramel in place of 8 oz of dates. But if you don’t have it around – just follow the recipe and you’ll be all set!

The Healthy Pumpkin Caramel Bars are gooey, full of Fall flavor, all-natural, sugar-free, low-fat and high in fiber! They are also easy to make, indulgent and delicious!
- 1 can chickpeas drained
- 1 cup cooked quinoa
- 1 cup dates 8 oz
- 1 cup pumpkin puree
- 2 egg whites
- 1/4 cup oil
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp pumpkin spice
- 1/4 tsp salt
Preheat the oven to 350F. Line a squire 9X9 inch brownie pan with parchment paper.
Put all the ingredients in the blender and blend until everything is super-smooth and incorporated.
Pour the mass from the blender into the pan and bake for about 1 hour or until set.
Cool before cutting and enjoy!
