HEALTHY PUMPKIN COOKIES
These home made cookies only take a few minutes to mix together! Yet, they’re full of Fall flavor, wholesome, VERY-VERY healthy (and low-calorie), while being so yummy: Your kids will never be able to tell that they’re actually health food (I know that because I’ve tested this on my boys: they kind of couldn’t stop enjoying them – and the best part: I didn’t have to worry too much about them having one too many of them!)
The “secrets” behind all the goodness?
- lots and lots of pumpkin!
- egg whites for a protein boost
- some fructose sugar instead of the regular sugar (since fructose is 1/3 times sweeter and thus you need to use less!)
- white whole wheat flour as the healthy carb choice
Et Viola! So… if you are someone who likes having the best of both worlds (i.e. indulge and have no guilt!) you should definitely give these yummy treat a try!

Healthy Pumpkin Cookies are all-natural, healthy, high in protein (no protein powders!), so easy and quick to make and so sweet and satisfying!
- 1/3 cup pumpkin puree
- 2 tbsp oil or melted butter
- 1 egg white
- 1/4 cup fructose sugar or 1/3 cup regular sugar
- 1 1/2 cups flour of choice I used oat flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp pumpkin spice
Preheat the oven to 350 F. Line a cookie sheet with parchment paper.
In a bowl mix together pumpkin, oil, egg white, vanilla and sugar.
Whisk together the flour, baking powder and pumpkin spice.
Add the dry mixture to the wet mixture and mix well.
WIth a cookie scoop or a tablespoon scoop out the cookie to the sheets and bake for 10-15 minutes or until golden brown.
