The Cookie Season is officially here! 🙂 Are you as excited as I am? To celebrate its opening I decided to offer you this recipe for the Healthy, Low-Calorie Amaretti Cookies!
Well, I know – I just recently posted a recipe for these Red Velvet Cookies! But… it wasn’t the Cookie Season then! Besides… I was just craving COOKIES! And when I baked these, they filled my kitchen with SUCH an amazing almond scent! 🙂

HOW TO GET THE BEST OF THE LOW-CALORIE AMARETTI COOKIES:
Do you know why I baking like cookies so much? Because they are SO EASY to make! All you need is one bowl, a few ingredients and… viola! A perfect treat is made!
But what makes baking cookies even betters is that you can prep the dough in advance and bake it whenever you feel like! For instance… Right before Christmas! Or… when you’re out of healthy treats and just wanna have cookies for breakfast! 🙂 Oh, and you know what makes cookies even Better? You can also bake AND freeze them! Unlike other more delicate desserts like cakes or pies, cookies freeze beautifully! All you need is an air-tight container or a zip-lock bag.
Throw the whole batch in there or split the batch into small stacks – and put them in your freezer! Thaw them out whenever you’re ready, toast them a few minutes just to bring the crispiness back… And you’ll be indulging on your cookies once again! Finally cookies are such a versatile treat! My favorite way of devouring them is of course when they’re freshly baked! But you can also use them to make a crust for your favorite cheesecake or crush them into your favorite parfait!
Or you can dip them into your coffee! (One of my favorite ways to snack!) I hope with these tips your cookie-indulging experience have just gotten even better! 🙂

The Low-Calorie Amaretti Cookies are healthy and so easy to make! They can be served as breakfast, snack or dessert! Go ahead and enjoy some... no guilt involved!
- 2/3 cup white whole wheat flour
- 3/4 cup fine almond flour
- 2 oz butter
- 1/2 cup fructose sugar
- 1 egg white
- 1/2 tsp baking powder
- 1/2 tsp almond extract
Preheat the oven to 350 F. Line the baking sheets with parchment paper.
Soften the butter by letting it sit at room temperature for about 10 minutes or soften it in the microwave. Stir together the butter, egg white, almond extract, and sugar.
Whisk together wheat and almond flours and baking powder. Fold the dry mixture into the wet mixture and mix well.
Using a tablespoon measure heaped tablespoons of the dough onto your lined cookie sheet, leaving about 1 1/2 inches between the cookies.
Bake the cookies for about 12-15 minutes or until golden brown. Let the cookies chill on the baking sheet before storing them and... enjoy!
