The Healthy Chocolate Pudding Cake is high-protein and low-calorie, yet all-natural (no protein powders, processed ingredients, additives, etc), super-easy to make and delicious paired with the Fat-Free Extra-Decadent and Super-Healthy Chocolate Mousse!Hi, friends!
So, who’s up for a few hours of sweating up next to a hot stove in a steamy kitchen? 😅 …And here’s what I’ve got to say about this: Nope-dy no! It’s hot enough outside! 🌞Besides, it’s also so-so beautiful out that I bet that no one wants to miss doing all those fun summer activities by staying indoors cooking all day, am I right? 🌸🌊☀️
Low-Calorie High-Protein Chocolate Pudding Cake that is…
- Quick and easy to make: all you need is a good-quality blender, otherwise it will take… ok, maybe 10 minutes more to make the dough which is still not THAT long! 🙂
- High-protein naturally, thanks to my two all-favorites: bean flour and greek yogurt!
- Low-calorie, low-fat and low-sugar
- Luscious and decadent (especially if you top it with the Healthy Fat-Free Chocolate Mousse)
- Tastes delicious! Nom-nom! I ate two slices and felt reeeealllly good, too! 😋😋😋
OK! Yeah! Now we’re talking, right? 🙂
So what do you think? Doesn’t it look sooooo luscious? 🙂
I love pairing it with the Healthy, Fat-Free and Super-Simple Greek Yogurt-Based Mousse (the recipe follows)! The recipe for this mousse is based on my all-favorite recipe for the Fat-Free Vanilla Mousse.
And to think about it you can really make this mousse in almost any flavor. For instance you can make it a Healthy White Chocolate Mousse. Or a Healthy Blackberry Mousse (that’d also make a great accompaniment to this cake!) 🙂 The choice is all yours! The only note that I want to add here is that when I make this mousse for the family I prefer using this all-natural pudding mix. There is sugar in it, but I believe that a bit of sugar won’t hurt anyone. (I also don’t believe in giving the kids any kind of a sugar replacement, even if it’s the healthiest ones such as organic stevia or erythritol. For myself I use this Naturally Sugar-Free Pudding Mix (made with the stevia) to make a decadent, but guilt-free and extra low-calorie treat!🌹
The Healthy Chocolate Pudding Cake is high-protein and low-calorie, yet all-natural and tastes great paired with the Fat-Free Healthy Chocolate Mousse!
- 2 cups fat-free greek yogurt
- 1 3.4 oz packet instant chocolate pudding mix**
- 1/2 cup chocolate chips optional - for decoration
To make the cake preheat the oven to 350 F. Line a squire 9X9 inch pan (you can also use a 9 inch round pan if you like!) with parchment paper.
If you have a high-powered blender, put all the ingredients in it and process until all the ingredients are incorporated. If you think that your blender may not handle the sticky dough, combine the oil, egg whites, yogurt and vanilla extract in a bowl and whip together until incorporated.
Whisk together the flour, pudding mix, cocoa powder, sugar, baking powder, salt and baking soda.
Pour the wet mixture into the dry mixture and stir until combined.
Pour the dough into a pan and bake for about 45 minutes or until the toothpick inserted in the middle of the cake comes out clean.
To make the chocolate mousse pour 2 cups of greek yogurt in a large bowl. Add the instant pudding mix whip until fluffy and incorporated. The mixture will become very thick at first, but you need to keep beating it until it fluffs up for the lusciously light texture!
*The fructose sugar is 1.5 times sweeter than the regular sugar. (which allows you to use less of it to cut down on the calories and on the sugar intake!). If you are using the regular sugar, use 1 whole cup of sugar.
**When I cook for myself I use this healthy sugar-free pudding mix. When I cook for the family I use this all-natural pudding mix because I don't believe in giving any kind of sugar-substitutes to the kids.
