Valentines’s Day is around the corner and what can be a better way to show the love than making, sharing and (of course!) eating a guiltlessly indulgent dessert such as this Low-Calorie Strawberry Mousse? 🙂
The Valentine’s Day Thoughts:
Do you HAVE to have a date to celebrate the V-Day with?…When I was a shy and a slightly chubby 🙂 teenager I swear, I thought that Valentine’s Day was created by an evil spirit just to mock hopelessly single people like me even more! (It’s like you didn’t feel awful enough from “not having a boyfriend at your “old” age of 17 already!) 🙂
But things changed. I found ways to get in shape and stay in shape for years. I got married and had my beautiful boys. Oh, and that’s when I “fell” out of shape for a few years. And got back in shape again – only for a different reason (I wanted ME to love the way I looked. Because once you’re a mom – you are loved no matter what!).And with all these changes changed my attitude toward the V-Day!
Obviously I stopped hating it long ago! Actually, these days I LOVE it!
Because the Valentine’s Day is NOT about being single or married. It’s not even about Being loved! In my mind now it’s about LOVE as a concept. Love as a mindset! Love in its widest of meanings!
- Love for your family and for your friends.
- Love for the strangers around you (because everyone has their own struggles and can use a little loving!).
- Finally, it’s about loving yourself! Because how can you give the love to the others if you don’t give some loved to yourself?

The Low-Calorie Strawberry Mousse Recipe!
Whether you’re making it for your and your beaux, your Galentine’s Day’s friends, your kids, your neighbors or… just for yourself… the sweet pink Low-Calorie Strawberry Mousse is an ultimate guiltless treat that’ll make anyone feel loved! (And taken good care of!)

- Low-Calorie: I’d say it can actually be considered one of those “negative calorie” foods: your body will probably spend more energy digesting it then it gets from eating it!
- Vitamin-rich (from all the Vitamin C in these strawberries!)
- Low-Sugar (because you don’t need lots of sugar for it to taste sweeeeet!)
- Easy to make!

The Low-Calorie Strawberry Mousse is low-calorie, fat-free and low-sugar. It’s easy to make and it’s also paleo, gluten-free and all-natural! You can enjoy it for breakfast, snack or dessert and have no guilt about it!
- 4 egg whites
- 1 lb fresh strawberries hulled and cut in half
- 1/4 cup sugar
- 1 tbsp vanilla extract
- 1 tsp cream of tartar
- 1 packet gelatin
Bring the strawberries to boil in a saucepan with a few tablespoons of water (to prevent them from sticking to the pan's bottom at first) over a medium heat.
Let them boil for a few minutes until they are completely cooked through.
In a small dish add 2 tbsp of cool water to the gelatin and stir until all the gelatin is wet.
Add the gelatin to the strawberries right after you turn off the heat under the pan. Stir to incorporate the melting gelatin in the strawberries. Add the vanilla extract and stir it in.
Pour the mixture in a blender and blend it until it's nice and smooth. Set the mixture aside to cool down.
While the strawberries are cooling down begin whipping the egg whites with the cream of tartar. When they start to froth add the sugar or the erythritol and keep whipping until the meringue is stiff.
With the mixer still running begin adding the strawberry mixture to the meringue, a tablespoon at a time. Once all the mixture is keep whipping for a few more minutes. The mixture will grow in volume as it's being whipped.
Pour your whipped dessert into the serving bowls and devour right away or stick it in the fridge to harden up and enjoy it within the next 1-3 days!
Optionally sprinkle with a few pretty nonpareils!

HI lisa, have you tried this with other fruit? I just picked my black currants and have stewed some down just not sure how many to use, maybe 1 cup what do you think.
