THE HEALTHY STRAWBERRY MINI CAKE
…Full of the currently in-season strawberries, vitamin-rich, naturally high-protein and low-calorie, I just love making a quick treat like this for breakfast!…Pretty-pink, paired with my morning tea (and a coffee!), a bowl of fresh fruit and a little bit of me-time – it sets my good mood up for the whole day ahead!
Yet, if I feel like having a traditional egg’n toast breakfast I will make a quick cake like this for a snack!
In the midst of a busy day having it breaks down my routine and boosts my spirits! 🙂
But do you know what the best thing about this mini cake is?
It is SO EASY and quick to make! All you need is a few minutes of mixing up and a few minutes of baking it in the microwave!
And here you go! Your perfectly pink breakfast is set up and ready to be enjoyed! 🙂

So… Let’s get to baking, shall we? 🙂
Low-Calorie Strawberry Mini Cake is naturally high-protein and low-calorie, it makes a great quick treat, dessert or a nutritious breakfast!
- 4 tbsp flour of choice
- 2 tbsp fructose sugar
- 2 egg whites
- 2 tbsp fat-free greek yogurt
- 1 tsp oil
- 1/8 tsp baking powder
- 1/4 tsp vanilla extract
Mix all ingredients until just combined.
Spray a In a 12-ounce mug with a tiny bit of oil spray. Pour the batter in.
Microwave for about 2-3 minutes watching to make sure it doesn’t spill over. If it's about to spill - just pause the process and then resume.
Let cool down for 2-3 minutes before eating. Top with additional greek yogurt and some strawberries if you like. Enjoy!
