This Banana Cake Roll is the best because it is SO DANG EASY TO MAKE!
I know! It’s hard to believe, because when you think of making a cake-roll, you think of baking the dough, rolling it and un-rolling it so it’s still intact, but magically curled. Then you think of making the frosting, smearing it all over your cake and then rolling it again…
Only to hope that it all’s going to stick together and look decent!
OK! And now imagine this:
- no smearing of the frosting!
- no folding and unfolding of the cake-roll dough!
- no mess in the kitchen from that frosting popping out from all around the cake-roll
- no stress and overwhelm whatsoever!
How is it done? EASY!
I’ve baked it all at once!
Yes: the cake-roll AND the frosting! It’s all baked at once, with the ricotta cheese frosting layer being put in first and the banana cake layer going on top!
Then it’s baked together, cooled altogether and then rolled together into one perfectly shaped roll!And that’s basically it! What do you think?

With this recipe for the Best Healthy Banana Cheesecake Roll not only you'll be making an impressive, low-calorie and healthy dessert! It's so easy to make!
Preheat oven to 375 degrees. Grease a 15x10 inch jelly-roll pan with some oil. Line with parchment paper; set aside.
First make the filling: In a small bowl, combine farmer's cheese, cream cheese and sugar. Beat with an electric mixer until smooth. Add the egg whites and vanilla and beat until combined. Spread in the prepared pan; set aside.
To make the cake: In a small bowl stir together the flour, baking powder and baking soda.
In a large bowl beat the egg whites on medium until soft peaks fork. Gradually add the sugar, beating on high speed until stiff peaks form. Gently fold the mashed banana and the vanilla extract into beaten egg whites. Gradually sprinkle the flour mixture over egg mixture and fold in just until blended.
Carefully spread the cake batter evenly over the filling in the pan. Bake for 20 minutes or until the top springs back when lightly touched.
Immediately loosen cake from the sides of the baking pan, sprinkle with the powdered sugar and cover with a clean kitchen towel. Place a wire rack on the top of the cake. Carefully pick up the pan, while holding the rack and flip over.
Your cake is now be on top of the towel on the cooling rack. Carefully peel off parchment paper. Starting with the short side, roll up cake as tightly as possible (don't roll up the towel with it). Allow to cool completely on wire rack.
Sprinkle with some confectioner's sugar if desired and serve. Wrap any leftover cake in plastic wrap and store in the refrigerator for 3-5 days. Enjoy!
