As much as we’d like to use less sugar in our baked goods, we usually only have three choices: settling for a blander taste, using more fat to add flavor (and calories!) or going for a sugar substitute! But wouldn’t it be nice if you didn’t have choose any one of these and just fully enjoy a 100% natural, yet yummy sugar-free dessert? Well, guess what: these Sugar-Free Almond Cookies are all that!
With just 3 ingredients on the list, the Sugar-Free Almond Cookies are seriously easy to make! (Just how a busy-lazy person like me likes it! 🙂 Making them was a blissful 5-minute prep process that I was able to complete when my boys were taking their showers… And as I REALLY wanted to get to taking MY shower ASAP so that I could have some me-time before rolling off for my 8-hour beauty sleep! 🙂
So basically all I had to do was throw all the ingredients in the food processor, give it a few spins, scoop the cookies out – et viola! 15 minutes in the oven and a healthy breakfast for me, a yummy snack for the boys and the any-time dessert for the whole family was DONE!
But the best part though is that the Sugar-Free Almond Cookies are indeed sugar-free (no added sugar OR sweeteners!), all-natural and low-calorie at the same time!
The secret? The bananas!
Gee, you probably already know how much I like using bananas in my desserts, right? Well, that’s partially because I ALWAYS have leftover overripe bananas in my kitchen!
But it’s also because the bananas are so sweet and gooey – they make perfect all-natural sugar-substitute for all sorts of baking needs!
I’ve already actually came up with a few banana-based sugar-free, yet sweet and all-natural treats such as The Banana Marshmallow Mousse. Making it and fully enjoying it made me think that bananas can work as a sugar substitute pretty well!
But… I haven’t made any sugar-free cookies just yet! Until now! So what do you say? I say – let’s get to the details of the recipe, because I simply LOVED the taste of these Sugar-Free Almond Cookies so much – I’m sure I’ll be making more very soon again! 🙂
The Sugar-Free Almond Cookies are all-natural, healthy, high in protein (no protein powders!), so easy and quick to make and so sweet and satisfying! It's hard to stop at one bite! But the best news is... you don't have to!
- 1 banana
- 2 egg whites
- 1 cup fine almond flour
- 1 tsp vanilla extract optional
Preheat the oven to 350 F and line a baking sheet with parchment paper.
Put all the ingredients in a food processor and process until fully inclorporated. The dough will resemble coarse crumbs.
Scoop out the cookies and bake for 15 minutes or until the tops are golden-brown.
Enjoy!
I love quick and easy cookies and I bet the banana gives it just the right amount of sweetness! What a treat!!
