-
2
cups
sweet potato puree
from 3 large or 4 small baked sweet potatoes
-
3
egg whites
-
1
oz
oil
-
3
oz
honey or maple syrup
-
1/4
cup
cocoa powder
-
1/4
cup
coconut flour
-
1
tsp
baking powder
-
1/4
tsp
salt
-
1
tsp
vanilla extract
-
Preheat the oven to 350 F and line a brownie pan with some parchment paper or oil it and dust it with some flour.
-
Put all the ingredients in your blender and blend at high speed until all the ingredients are blended and incorporated.
-
Pour the brownie batter in the pan and bake for 40 min-1 hour depending on how super-fudgy you want your brownies to be. (I like mine more solid so I baked these for 1 hour).
-
Enjoy as soon as they've cooled down enough to cut'em up and grab a slice or, just to be extra-fancy and extra-indulgent melt 1 oz of dark chocolate and drizzle it over the brownies.
