Healthy Low Calorie Chocolate Cake and Fat-Free Chocolate Mousse

The Healthy Chocolate Pudding Cake is high-protein and low-calorie, yet all-natural and tastes great paired with the Fat-Free Healthy Chocolate Mousse!

Ingredients
For the Cake:
  • 1 cup bean flour
  • 1/2 cup cocoa powder
  • 1/3 cup oil
  • 2 cups fat-free greek yogurt
  • 2 egg whites
  • 1/4 cup fructose sugar*
  • 1 3.4 oz packet instant chocolate pudding mix**
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
For the Fat-Free Chocolate Mousse:
  • 2 cups fat-free greek yogurt
  • 1 3.4 oz packet instant chocolate pudding mix**
  • 1/2 cup chocolate chips optional - for decoration
Instructions
  1. To make the cake preheat the oven to 350 F. Line a squire 9X9 inch pan (you can also use a 9 inch round pan if you like!) with parchment paper. 

  2. If you have a high-powered blender, put all the ingredients in it and process until all the ingredients are incorporated. If you think that your blender may not handle the sticky dough, combine the oil, egg whites, yogurt and vanilla extract in a bowl and whip together until incorporated. 

  3. Whisk together the flour, pudding mix, cocoa powder, sugar, baking powder, salt and baking soda. 

  4. Pour the wet mixture into the dry mixture and stir until combined. 

  5. Pour the dough into a pan and bake for about 45 minutes or until the toothpick inserted in the middle of the cake comes out clean. 

  6. To make the chocolate mousse pour 2 cups of greek yogurt in a large bowl. Add the instant pudding mix whip until fluffy and incorporated. The mixture will become very thick at first, but you need to keep beating it until it fluffs up for the lusciously light texture! 

  7. Enjoy! 

Recipe Notes

*The fructose sugar is 1.5 times sweeter than the regular sugar. (which allows you to use less of it to cut down on the calories and on the sugar intake!). If you are using the regular sugar, use 1 whole cup of sugar.

**When I cook for myself I use this healthy sugar-free pudding mix. When I cook for the family I use this all-natural pudding mix because I don't believe in giving any kind of sugar-substitutes to the kids.
